Life as parent is always busy. Whether you’re working full time, part time, or at home with your children, trying to keep life running smoothly for your family is a full-time job in itself. Trying to figure out how to put a good meal on the table shouldn’t be one of the things that adds stress to your life. As a busy parent myself, I sometimes struggle with this task. I’m always looking for new ideas to keep meals interesting but still be able to get them on the table quickly. I’ve come up with a list of some of my favorite weeknight meals that are perfect for all the busy parents out there.
I am such a fan of utensils and appliances that can make my life a bit easier. That’s why I’m constantly reaching for my slow cooker in the morning to prep the protein (chicken, beef, pork) for a quick assembly when I get home. Not only is it amazing to come home from a long day at work to the house smelling so good, but I’m so relieved not to be facing a long day of cooking. Clean up can be simplified too, as many slow cookers have bag inserts for easy cleanup.
Slow-Cooker Sweet Pork is a favorite in my house. I simply combine sweet and savory ingredients like pineapple juice and soy sauce with boneless pork shoulder and cook on low for eight hours until it’s fork tender and completely falling apart. I simply shred it and have a delicious protein that I can use in multiple ways. My favorite is the Sweet Pork Tacos with Grilled Pineapple Salsa on Mi Rancho Non-GMO Cornflowers Tortillas. I can lay out all of the ingredients on the dining room table and my family gathers around to make our own tacos. It’s bright colorful, and all can be prepped in advance leaving me to heat the tortillas and enjoy. We almost always have leftovers from the big roast, so I like to repurpose the meat in another meal that same week. My husband loves when I use the sweet pork to make Cubano Sandwich Wraps, rolling the pork with salty ham, cheese, and pickles in Mama’s Simply Authentic Burrito Flour Tortillas and grilling it to perfection. I serve this with a simple green salad on the side and dinner is done! They’re such a hit and couldn’t be simpler.
Sheet-Pan Meals are another favorite for busy parents. My favorite? Sheet-Pan Chicken Fajitas. With minimal prep time, seasoned chicken breast slices cook alongside fresh peppers, onions and vegetables in less than 30 minutes! Another go-to meal on hectic weeknights is Baja Fish Tacos with Spicy Avocado Verde Salsa and Lime Crema. Yes, I use pre-made beer-battered fish, which is available in so many different types of fish and sizes at almost all grocery stores and warehouse stores. Since I save time on the protein and am not breading my own, I can add that extra step of making my own sauces and a fresh cabbage and pico de gallo slaw to top these delicious tacos. We tend to load up on toppings and sauce to make them extra messy, so I choose to pair them with Mi Rancho Organic Corn Tortillas. A great shortcut for easy meals is rotisserie chicken that you can find in any deli or hot-food section of the grocery store. I shred it when I get home and keep it in an airtight container. It can be used in so many different meals, but my favorite lately is Mexican Shredded Chicken Tostadas. First, I toss the rotisserie chicken in salsa, usually a salsa verde for a tangy and spicy flavor that the chicken soaks right up. I fry up homemade tostadas using our Organic Corn Tortillas, and then spread them with refried beans. Then I pile it high with a large portion of chicken, shredded lettuce, pico de gallo and fresh avocado. They’re messy but oh so good.
